Vegetable Masala

Ingredients
250 grams yogurt
1 carrot
1 bottle gourd
1 capsicum
1 potato
½ cauli flower
2 pinches ginger powder
½ cup peas
½ cup boiled chickpeas
½ cup oil
1 tbsp ground cumin
1 tbsp coriander powder
½ tsp nutmeg, mace powder
2 tbsp ginger garlic paste
2 tbsp red chili powder
Salt to taste

Method
Cut 1 carrot, 1 medium bottle gourd, 1 capsicum, 1 potato and ½ cauliflower into small pieces. In a pan, heat ½ cup oil and sauté 2 tbsp ginger, garlic paste until golden brown. Then add chopped vegetables and ½ cup peas and stir together. Allow cooking for 10 to 15 minutes. Now add 250 grams yogurt, 2 pinches ginger powder, 1 tbsp ground cumin, ½ tsp nutmeg, mace powder, 2 tbsp red chili powder and salt to taste and stir together. Decrease the flame and cover to allow simmering. When vegetables are tender, stir quickly at high flame until water has evaporates. Delicious Vegetable Masala is ready to serve.
