Al Baik Chicken

Ingredients
1 whole chicken with skin
2 lemons
2 eggs
1 cup corn flour
2 cups plain flour
1 tbsp ginger paste
½ tsp red food color
½ tsp cinnamon powder
2 tbsp garlic paste
4 tbsp red chili powder
4 tbsp olive oil
Oil for frying
Salt to taste

Method
Cut whole chicken into 8 pieces and make sure that the skin does not remove. Mix together 4 tbsp red chili powder, juice of 2 lemons, ½ tsp cinnamon powder, 4 tbsp olive oil and salt to taste and fill in syringe. Marinate chicken pieces with 2 tbsp garlic paste, 1 tbsp ginger paste and salt to taste. Beat 2 eggs in a bowl and keep aside. Dip chicken in beaten eggs and coat with plain flour. Repeat the process. Fill the chicken with prepared spice mix with a syringe. Fry in a covered pan for 10 to 15 minutes. Al Baik Chicken is ready to serve.
