Ingredients
300 grams boiled chickpeas
1 cup oil
1 glass chicken stock
1 onion
2 tomatoes
4 green chilies
¼ bunch fresh coriander
1 tbsp turmeric powder
1 tbsp crushed black pepper
1 tbsp red chili powder
3 tbsp tamarind paste
4 tbsp lal masoor ki daal
Salt to taste
Method
Boil 300 grams chickpeas. Add 1 onion, 2 tomatoes, 4 green chilies and some water to the chopper. Heat 1 cup oil in a pan and stir blended vegetables for a few seconds. Then add tamarind paste and chickpeas and mix together and stir together. Turn off the flame when ingredients are well combined. Top Masalaydar Cholay with your favorite dips and serve.
Green Dip
Ingredients
125 grams yogurt
¼ bunch fresh coriander
¼ bunch mint
3 to 4 green chilies
1 tbsp cumin seeds
Salt to taste
Method
In a blender, add ¼ bunch fresh coriander, ¼ bunch mint, 3 to 4 green chilies and 125 grams yogurt and blend to form a fine paste. Sauté 1 tbsp cumin seeds and add to the yogurt mix. Also add salt to taste and mix thoroughly. Green Dip is ready to serve.
Sweet Dip
Ingredients
1 tbsp corn flour
3 tbsp sugar
4 tbsp tomato ketchup
3 to 4 tbsp tamarind paste
Salt to taste
Method
In a pan, add 4 tbsp tomato ketchup, 3 to 4 tbsp tamarind paste, salt to taste, 3 tbsp sugar and some water and allow cooking. When mixture is well sautéed, add 1 tbsp corn flour to thicken the gravy. Sweet Dip is ready to serve.
Aalo Samoosa
Ingredients
250 grams plain flour
2 potatoes
¼ bunch fresh coriander
¼ bunch mint
1//2 cup boiled peas
1 tsp ajwain
1 tbsp red chili flakes
½ tsp onion seeds
½ tsp mustard seeds
½ tsp turmeric powder
2 tbsp clarified butter
Water to requirement
Oil for frying
Salt to taste
Method
Chop 2 boiled potatoes and mix with ¼ bunch fresh coriander, ¼ bunch mint, ½ cup boiled peas, 1 tbsp red chili flakes, ½ tsp onion seeds, ½ tsp mustard seeds and ½ tsp turmeric powder. Also mix 250 grams plain flour, 1 tsp ajwain, 2 tbsp clarified butter and salt to taste and knead into fine dough. Form samoosa stripes into shape of samoosa and stuff with potato mix. Fry samoosas and serve with your favorite dip.
